The hardest thing for an English-Canadian emigre to come to terms with is the absense of Baked beans on Toast in the New World.
To Assist you in your assimilation I have taken the liberty to include a recipe for a Canadian specialty - Baked Beans in Maple Syrup
4 cups dried beans
1 small onion
5 strips of bacon cut into 1-inch pieces
Several cubes of salt pork
125 ml of chili sauce
250 ml of 100% pure Canadian spring maple syrup
1 tsp dry mustard
2 tsp salt
Soak beans overnight, Simmer for 30 minutes. Drain. Pour beans into a deep, preferably heavy cooking pot. Add onion, bacon and salt pork.
Combine maple syrup, chili sauce, mustard and salt. Pour mixture over beans. Then add enough boiling water so that the level of liquid is 1 inch higher than that of the beans. Cover the pot with aluminum foil before tightly putting on the lid to the pot.
Bake in a 275˚ F/130˚ C oven for 5 hours or more, as desired. Check beans now and then, adding water when necessary.
